The Järvenpää 1240 Fillet Knife is a fish fillet knife that comes with its own leather sheath. This one makes a lot of sense to me as it has extreme flexibility to glide along in any form.  This knife has a simple birch handle and sensibly sized blade. It's not burdensome on the belt.

The wooden handle is precisely fitted to the ferule and blade. The leather sheath is elegant and strong. The knife far exceeded my expectations.
